Friday Focus

Ash Wednesday marks the start of the countdown to Easter (April 12th this year).  I have implemented what I talked about last Friday on eating a plant based diet and to lessen procrastination.  Last Saturday, I spent the day re-organizing my kitchen, putting away things I don't use and putting things I do use in more logical places.  Let's put it this way, it is going to take another day or two to finish.  As to the eating, I tried vegan hotdogs.  Boil them, do not airfry them!  My daughter took me to a store and pointed out vegan products that she uses and that was so helpful because when you get in a store and have all these choices you can get overwhelmed.  I have a new way to make oatmeal that I absolutely love: 

1/2 cup old fashioned oats, 3/4 cup nut milk, 1 tbsp plant butter.  Microwave for 3 minutes.  Add to it salt and stevia to taste and sprinkle pecan pieces and cinnamon over the top.  Made me so happy!

I also made my own plant based coffee creamer:

1 can coconut milk, stevia to taste, your favorite extract to taste and water to thin to consistency you prefer.  It does not taste like coconut and took less than 5 minutes to whip up.  I've been using it all week.

Sunday is my prep day to set the week up for success and less stress.  I peruse my recipes, decide what I'm going to make, shop for any needed ingredients and spend 1-2 hours in the kitchen getting stuff ready.  This helps so much when you come home tired and just want something fast.  I also spend Sundays mapping out my week in my planner...it helps me to see what days will bring more activity and what days are available for downtime and refreshing.

Study progress:

  • continued chronologically through Exodus.  Was in the section of all the tabernacle preparations
  • Read thru Daniel 3-4 with my friend.  Also did Daniel 7 to prepare for Sunday's sermon.
What I'm concerned about this week:  a tragedy happened in our local community and it has affected many people.  It is one of those events that has you contemplating the fragility of life and makes you want to do better in loving others because you never know how long you have.  I'm also concerned about the fear of the coronavirus and this fear is affecting politics, finances and people's mental health.  I choose instead to rest in His peace.
